Spring Dining!

A week today until the official start of Spring! A time when we start thinking about lighter dishes and al fresco dining once more as the comfort foods of Winter give way to delights such as this miniature

Layered with light puff pastry and sandwiched together with whipped double cream and mixed fresh fruit, the cake is surrounded by a crunchy assortment of chopped and toasted nuts before being topped with icing sugar and a hint of the delicious fruit inside! Can't you just imagine sitting outside on a lovely, warm Spring night with a glass of something cold and a fork ready to dig in to a slice of this?!!
