It's that time of year again, when we all say goodbye to another twelve months and start thinking about all the wonderful things we're going to do with the next! Well, here in the Hebrides the extra few minutes of daylight we get in the late afternoons are already a tangeble taste of the Spring and Summer to come, so what better way to celebrate the start of 2011 than with a gorgeous Summer Salad?! Such an intricate piece, each lettuce leave, slice of tomato, onion or carrot has been individually stuck into the glass bowl! Here's a picture of some of the pieces before they went into the bowl so you can see the size and detail, along with a photograph of the finished piece!
